This session provides an overview of the state and federal regulations that apply to value-added product manufacturing. Participants will learn where products can legally be produced, including on-farm facilities, shared-use kitchens, and co-packing operations, as well as the permits and licenses required for wholesale sales. The workshop will also cover labeling requirements and how products must be labeled to enter the marketplace compliantly.
In addition, the session will introduce a range of product categories and explore how they are defined by shelf life. Participants will discuss the science of shelf stability and how formulation, processing, and packaging decisions impact product safety and regulatory classification.
